Tulsa, Okla. - Pause at the Release is our periodic feature in which we highlight the perspective of one of our student-athletes. We're back in twenty-hour weeks, school and classes are in full swing, and a lot of the time we need a quick and healthy snack option. For the month of February, we thought we'd share some of our favourite recipes for when you're on the go, traveling, or are looking for a tasty but healthy treat.

"While these may look like brownies, they are actually healthy "brownies" that have a serving of vegetables and only about 150 calories per bar! Plus, they are gluten free, and don't call for refined sugars. I love snacking on them before and after practice because they are really filling and healthy!"
Here's the recipe:
1 1/2 cups mashed sweet potatoes
1 cup nut butter
1 egg
1/4 maple syrup or honey
1tsp vanilla
2tsp cinnamon
1tsp baking soda
Instructions: Preheat oven to 350. Microwave each sweet potato on high for 6-8 minutes, the peel and mash. Mix all ingredients together, adding the egg last. Pour batter into 8x8 square baking dish, bake for 25 minutes or until toothpick inserted into center comes out clean.
